Method
- Preheat oven to 400°F (200°C). Wash and scrub the sweet potatoes, pat dry, and prick with a fork. Rub with olive oil and sprinkle with salt. Bake for 40–45 minutes until tender.
- Cook the ground beef in a pan over medium heat. Add taco seasoning, salt, and pepper. Cook until browned and fully cooked. Set aside.
- Slice each baked potato in half lengthwise. Use a fork to fluff the inside and gently press to create a boat shape.
- Add a generous portion of seasoned ground beef onto each potato half. Top with shredded cheese.
- Return to oven or broil for 3–5 minutes until cheese is melted and bubbly.
- Garnish with chopped green onions. Serve with sour cream and guacamole.
