Loaded Ground Beef Stuffed Sweet Potatoes

Ingredients
  

For the Sweet Potatoes
  • 4 medium weet potatoes
  • 1 tbsp olive oil
  • salt (to taste)
For the Filling
  • 1 lb / 450g ground beef
  • 1-2 tbsp taco seasoning
  • salt (to taste)
  • black pepper (to taste)
Toppings
  • 1 cup shredded cheese (Monterey Jack, mozzarella, or white cheddar)
  • sour cream
  • guacamole

Method
 

  1. Preheat oven to 400°F (200°C). Wash and scrub the sweet potatoes, pat dry, and prick with a fork. Rub with olive oil and sprinkle with salt. Bake for 40–45 minutes until tender.
  2. Cook the ground beef in a pan over medium heat. Add taco seasoning, salt, and pepper. Cook until browned and fully cooked. Set aside.
  3. Slice each baked potato in half lengthwise. Use a fork to fluff the inside and gently press to create a boat shape.
  4. Add a generous portion of seasoned ground beef onto each potato half. Top with shredded cheese.
  5. Return to oven or broil for 3–5 minutes until cheese is melted and bubbly.
  6. Garnish with chopped green onions. Serve with sour cream and guacamole.

Notes

For extra flavor, broil the potatoes for a minute longer to get a golden, slightly crispy cheese topping. You can also add black beans or corn for more texture.
