Ingredients

For the Meat Filling
  • 500 g ground beef
  • 2 tortillas large
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp salt to taste
  • 1 tsp pepper powder to taste
  • fresh parsley a handful, chopped
For Serving
  • 3-4 tbsp yogurt
  • melted butter for drizzling

Method

Make the Meat Tortilla Rolls
  1. In a bowl, combine the ground beef, onion, garlic, parsley, salt, black pepper, and red pepper powder. Mix well until fully combined.
  2. Lay the tortillas flat and spread the meat mixture in a thin, even layer over each tortilla.
  3. Roll each tortilla tightly into a log.
  4. Slice each rolled tortilla into pieces and thread them onto skewers.
  5. Place the skewers on a baking tray and drizzle lightly with olive oil.
  6. Bake in a preheated oven at 350°F until golden and cooked through.
  7. Spread the yogurt on a serving plate.
  8. Arrange the baked meat tortilla rolls over the yogurt.
  9. Drizzle melted butter over the top and serve.
  10. Baking time may vary slightly by oven, so bake until the rolls are lightly golden and heated through.

Notes

  • Warm the tortillas slightly before rolling if needed to help prevent cracking.
  • Do not overfill the tortillas, or they may open while baking.
  • Serve soon after adding the melted butter for the best texture and flavor.
