Make the Batter:
Place the chia seeds and oats in a bowl. Pour in the water. Blend on high speed until the mixture becomes a smooth, pourable batter (similar to pancake batter). Let it sit for 15 minutes to allow the chia seeds to absorb some liquid and thicken slightly.
Cook the Wrap:
Heat a non-stick frying pan over medium heat. You can lightly spray with oil if your pan isn't non-stick, though chia seeds have natural oils. Pour the batter into the center of the pan and swirl it around (or use a spatula) to spread it into a thin, round circle.
Flip:
Cook for about 2–3 minutes until the edges set and the bottom is golden brown. Flip the wrap carefully and cook for another 2–4 minutes on the other side.
Assemble:
Place the cooked wrap on a cutting board.
Spread a layer of mashed avocado across the center.
Add a layer of fresh greens (arugula or spinach).
Top with fluffy scrambled eggs.
Serve:
Fold the wrap in half (taco style) or roll it up. Serve immediately with a side of fresh fruit and yogurt for a complete, healthy breakfast or lunch.
