Healthy Chia Seed & Oat Wrap

Ingredients
  

  • For the Wrap Batter:
  • Chia Seeds: 2 teaspoon
  • Oats: 1 and ½ cup (rolled oats or quick oats work best)
  • Water: 500ml (adjust for desired consistency)
  • For the Filling:
  • Mashed Avocado: 2 tbsp
  • Greens:A handful of arugula or spinach
  • Scrambled Eggs: 2 eggs, parsely, whisked and cooked soft
  • Salt & Pepper: To taste

Method
 

  1. Make the Batter:
  2. Place the chia seeds and oats in a bowl. Pour in the water. Blend on high speed until the mixture becomes a smooth, pourable batter (similar to pancake batter). Let it sit for 15 minutes to allow the chia seeds to absorb some liquid and thicken slightly.
  3. Cook the Wrap:
  4. Heat a non-stick frying pan over medium heat. You can lightly spray with oil if your pan isn't non-stick, though chia seeds have natural oils. Pour the batter into the center of the pan and swirl it around (or use a spatula) to spread it into a thin, round circle.
  5. Flip:
  6. Cook for about 2–3 minutes until the edges set and the bottom is golden brown. Flip the wrap carefully and cook for another 2–4 minutes on the other side.
  7. Assemble:
  8. Place the cooked wrap on a cutting board.
  9. Spread a layer of mashed avocado across the center.
  10. Add a layer of fresh greens (arugula or spinach).
  11. Top with fluffy scrambled eggs.
  12. Serve:
  13. Fold the wrap in half (taco style) or roll it up. Serve immediately with a side of fresh fruit and yogurt for a complete, healthy breakfast or lunch.
